Pecan Pie Muffins

Toasted pecans with a gooey, crunchy mini-bite

Ingredients

  • 1 cup pecans chopped
  • 1 cup brown sugar packed
  • 1/2 cup a.p. flour
  • 2 eggs
  • 1/2 cup butter melted
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees

  2. Chop pecans

  3. Toast pecans for 10 minutes. Don't let burn

  4. Increase oven to 400 degrees

  5. Combine pecans, brown sugar and flour in a mixing bowl. Make a well in the center of ingredients.

  6. Add remaining 3 ingredients in the well.

  7. Mix with a hand-mixer until ingredients are just combined. No need to over beat!

  8. Spray mini muffin tins with non-stick spray

  9. Fill tins 2/3s full

  10. Bake 12-15 minutes

  11. Allow to cool in pan before removing
