Not gonna lie. These are a hit with every single person who is lucky enough to pry them out of my greedy hands! These pecan pie muffins have graced our kitchen for years and I can’t believe they haven’t made an appearance on my blog yet. No longer must you wait. Get into your kitchen!
Pecan Pie Muffins
Toasted pecans with a gooey, crunchy mini-bite
Ingredients
- 1 cup pecans chopped
- 1 cup brown sugar packed
- 1/2 cup a.p. flour
- 2 eggs
- 1/2 cup butter melted
- 1 tsp vanilla
Instructions

Preheat oven to 350 degrees

Chop pecans

Toast pecans for 10 minutes. Don't let burn

Increase oven to 400 degrees

Combine pecans, brown sugar and flour in a mixing bowl. Make a well in the center of ingredients.

Add remaining 3 ingredients in the well.

Mix with a hand-mixer until ingredients are just combined. No need to over beat!

Spray mini muffin tins with non-stick spray

Fill tins 2/3s full

Bake 12-15 minutes

Allow to cool in pan before removing
