Seriously, as busy mamas, we need to have recipes that are staples. Those that take minutes to prepare, feed an army and don’t require much thought. THIS is one of those keepers!
Smoked Sausage Skillet
I buy links of smoked sausage when they’re on sale (smoked sausage or Polish Kielbasa work the same here) and keep them in my freezer for those nights when I’m rushed or just don’t know what else to make. You know those nights. I pull the frozen broccoli and mixed bell peppers out of the freezer, put the rice on and while it cooks, prep everything else. By the time the rice is finished, everything else is too. Combine them and dinner is served!
And, now that most nights don’t include kids at dinnertime, it makes tons of leftovers for lunch the next day. Win-win!
Smoked Sausage Skillet
Ingredients
- 1 13.5 oz Johnsonville Polish Kielbasa thinly sliced
- 8 mini red & yellow bell peppers
- 10 mini broccoli florets
- 1/2 cup chicken broth
- 1/2 cup tomato sauce
- 2 cups rice
- 1/2 cup Mozzarella cheese shredded
- 1/2 tsp salt
Instructions

Prepare rice as directed on your bag’s instructions. I use brown rice but white rice and Basmati rice works great too.

Heat large skillet and lightly brown sausage.

Add broccoli florets and bell peppers. Cook 3-5 minutes.

Add chicken broth and tomato sauce. Cook down to reduce.

Add rice to sausage mixture. Stir.

Add cheese and stir throughout.
Recipe Notes
*Don’t like broccoli? Leave it out. Substitute any veggie you like and that your kids will eat.*
**My number 1 recommendation when making rice is to soak your rice before cooking. Measure the rice needed for your recipe and cover with enough water to submerge rice. Allow to soak for 10-15 minutes. Drain rice and then add the correct amount of water necessary for cooking.**
